BCM7 or related peptides. By contrast, there is a substantial body of evidence indicating that
different proteolytic systems involved in fermented milk or cheese manufacture can
potentially hydrolyze -casein to BCM7 or other BCMs and further degrade these peptides to
shorter-chain peptides and even amino acids
